Abstract : Antioxidants are vital substances which possess the ability to protect the body from damages caused by free radical-induced oxidative stress. A variety of free radical scavenging antioxidants are found in dietary sources like fruits, vegetables and grains. This work was undertaken to be a scientific evidence of this truth based on Quran, may Allah accept from us. The purpose of this study was to evaluate the antioxidant activity of 16 selected plant materials from the holy Quran, namely, banana, cucumber, snake cucumber, date, figs, garlic, ginger, gourd, red grape, white grape, orange lintel, black olive, green olive, red onion, pomegranate and wheat. The antioxidant capacity of these extracts were investigated based on their ability to scavenge (DPPH) stable free radical. Phenolic content of the extracts was determined using Folin-Ciocalteau reagent. These two assays are first done with water extraction to leave the samples in the same way in which they are consumed and the results are inconsistent. All extracts with organic solvent (ethanol 50%) had significant antioxidant potential which reduced the DPPH radical formation in a dose-dependent manner and the results were expressed as IC50. The results showed, in general, a good correlation could be found between antioxidant activity and phenolic content. The activities of active oxygen-scavenging enzymes, superoxide dismutase, catalase and glutathione peroxidase were evaluated and catalase has the highest activity compared with the two enzymes SOD and glutathione peroxidase which suggest that catalase is a key enzyme in active oxygen detoxification during fruit ripening.
